' 'Every cup of coffee here is made using Biei Jersey milk. This good quality dairy product comes from brown Jersey cows, which only make up barely 1% of the cow population in Hokkaido. It is rich and creamy, with a tinge of sweetness. You can taste the difference that the milk makes after one sip. My cup of cappuccino was velvety smooth.'

'This classic cream-based pasta dish is made using its signature Hokkaido BIEI Jersey Milk in the sauce, thus expect more luscious and velvety base yet not cloying. Thick strips of Hokkaido Kurobuta bacon are tossed into the spaghetti noodles to add a depth of umami flavour. Served with a topping of poached egg seasoned with black pepper, and grated Parmigiano Reggiano cheese. I expect this pasta dish to become one of Baristart Coffee Singapore’s most popular mains.'

Juicy and tender
'As I looked at the menu, I chanced upon this monstrous dish: the Tonkatsu Sando ($16.80++). A chunky piece of tonkatsu was sandwiched between lightly toasted white bread. The only vegetable in sight was a heavy cabbage slaw that’s tossed in a sinful concoction of tonkatsu sauce and mustard butter.Cutting through the pork, I was surprised by how lean it looked. Yet, despite appearances, it was juicy and tender.There was also a thin layer of fat, which accentuated the porky flavours of the tonkatsu and gave a distinct contrast to the crispy texture.'

'Now, this was comfort food at its best. The centimetre-thick pork cutlet was juicy and well-seasoned, which made every bite quicker than the last. Together with the chopped cabbage, tonkatsu sauce and mustard butter stacked between crustless white bread, this was a killer combination. Do not be deceived by this plain-looking sandwich; it’s far more delicious than it looks and we’d be selfish to share a bite.'
