'The Double Boiled Treasure broth is actually the upgraded version of their usual chicken broth. Behind this new stock is a laborious preparation that took more than six hours, making sure it becomes worthy to be called a âtreasureâ. With extravagant Chinese herbs like red dates and wolfberries, this double-boiled stock has developed into a rich and robust flavoured chicken soup to warm your soul. I find that the soup goes well with some of the House Specials such as Fortune Fish Paste, Stuffed Beancurd Skin and Shrimp Wantons.'

'My favourite is the Huadiao Phoenix Broth, which is a chicken soup spiked liberally with huadiao, a Chinese rice wine. It comes with a plate of chopped raw chicken which is first flambed before it is added to the broth together with ginger slices, wolfberries and red dates. A cup of huadiao goes in as well. When the chicken is cooked, get a taste of the broth. It is delicious with a heady fragrance that reminds me of the huadiao chicken soup that is served as a Chinese confinement dish.'
