Terence Chi, Founder, Guan Chee Hong Kong Roasted Duck

Like many young people during the early 1970s, Terence Chi began working at the tender age of 13. From starting as an assistant at a provisions shop to being a welder in a shipyard, he eventually found himself working at a roast duck stall, where he learned the ropes of charcoal roasting.

Super crispy and tender pork
'The roasted pork was decent- what was most fantastic about the roasted pork was how crispy and crunchy the roasted top layer of the pork was. The pork was tender and had sufficient fatty parts to go too. The roasted duck was a little tough, but it was well done too- very flavourful and chewy. Goes well with the dark sauce or plum sauce provided!'

'The array of meats - soya sauce chicken, roast duck, roast pork, even a suckling pig - displayed at the stall is enough to make me hungry. I go for the combination of roast duck and roast pork rice, which does not disappoint. The roast pork has the right amount of fats and tender meat with a crispy skin. Prices start from $4.50 for char siew rice, roast pork rice, honey sausage rice, and honey glazed pork ribs rice.'
