One of the best dishes here
'The Half-metre Spanish Pork Ribs ($35) was one of the best dishes of the day. Essentially prepared via the increasingly popular reverse-sear method, this huge slab of ribs is first cooked at a very low temperature to ensure that the flesh is moist and juicy before being finished at 400 degrees to achieve a crispy smoky crust on the outside.'

Grilled to perfection
'Much of the food goes through the fire of their Josper grill, needless to say. What they focus on here is simple Spanish food, so there is nothing fancy or very interesting. Our favorite dish, charcoal seafood paella ($26), is wet like mui fan. Although it may be too wet, the sweet tomatoey flavor is very addictive. I do like paella to be burnt at the bottom of the pan, but this one is too wet to burn. The mussels are grilled perfectly: still tender.'

Nicely grilled
'The boneless chicken leg ($19) was heavily smothered with a generous amount of garlic sauce. The chicken itself was very good – nicely grilled and not overcooked. We did not really need that much sauce and pushed most of it aside. The chicken was served with a pot of rice.'
